They allow heavier loads to be carried lower to the ground making the bike more stable at higher speed. Their drop handlebars offer multiple hand positions for comfort over long distance and their additional "frog leg" brake levers on the top of the bars allow a little extra safety when holding the tops of the bars in traffic. 36 spoke wheels also add reliability when carrying luggage.
